The head of the cauliflower is medium sized, tight and white-flowered; winter cauliflower head is large, tight and white flowers, and march cauliflower head is small, tight and white flowers. Loose-headed and yellowish flowering cauliflowers are not acceptable. Recently, however, varieties of cauliflower with pink, purple and yellow flowers have also been grown in Western countries. Cauliflower; soup, fries, plain and olive oil moussaka is consumed by making salads.
